COLOUR: Pale straw with green tints and a brilliant appearance
NOSE: Floral notes, citrus rind, and lemon curd flood the nose, providing no doubt as to the wine's regional origins!
PALATE: The palate is all classic Watervale: fresh kaffir limes, tightly wound natural acidity, and just a hint of marmalade on the long finish. A wine for serious cellaring!
Winemaking: Hand-picked fruit was gently crushed and allowed to drain through a membrane press, with all pressings kept separate. The free-run juice was cold-settled and fermented at 14 degrees using the introduced yeasts for three weeks until complete dryness. The wine was then stabilized, filtered, and bottled until a screw capsule in October 2023.
Cellaring: Will age beautiful, with a potential of at least 20 - 25 years.
Food pairing Suggestion: Ideal for lighter foods such as curries and smoked cheddars. It also makes an excellent complement with shellfish and white meats.
