2021 Great Northern Semillon

Region: Clare Valley

Vineyard: A single vineyard wine, planted on an easterly facing and elevated slope in the highest rainfall location in Watervale. It lies adjacent to the old Great Northern highway that used to pass through the Clare Valley.

Season Report: One of the cooler and wetter Spring and ripening periods we have had in Clare for a while. The lower overall temperatures suit Semillon well, preserving its natural acidity and delicate, lemon-infused fruit characters.  Definitely a year that will benefit those that like to cellar wine.

Winemaking: Machine harvested in the cool of the early morning. Drained through a membrane press with some light pressings returned to provide additional flavour. Fermented initially in stainless steel before transferring to seasoned French oak and allowed to cellar for six months. The wine was re-blended, stabilized and crossflow filtered before bottling in October 2021.

Cellaring: Cellaring potential of at least fifteen to twenty years.

Tasting Notes: Pale straw with youthful green tints and brilliant clarity. Lifted notes of lemon zest and cut grass predominate, subtly enhanced by charry French oak seasoning.

Food Pairing Suggestion: Thai green salmon and spring vegetables such as asparagus and peas
