2015 Watervale Riesling - Museum Release

Varietal: Riesling 100%

Vineyard: A Single vineyard blend from our family vineyard on Springvale Road, Watervale.

Season Report: Generally, a warmer year for Clare, intermittent rainfall occurring between December and February assisting the ripening process with the valleys unique diurnal temperature variations slowing the process down and allowing the fruit to be hand-harvested at the optimum mix of flavour ripeness, sugar accumulation, and acid balance.

Winemaking: Fruit was carefully selected,  crushed, and drained to a settling tank with the pressings diverted elsewhere. A cool ferment continued over three weeks until complete dryness, bottling taking place in July with the wine put down to mature before its release in March this year.

Tasting Notes: Five years resting in the cellar have reshaped this wine into a more toasty and honeyed style, still classically Watervale Riesling, yet now possessing new complex and textural qualities that have opened up whole new food pairing possibilities. Hints of grapefruit, citrus rind, and candied fruits abound yet still tied to a steely acid spine so typical of the variety.

Cellaring: Will age beautiful, with a  potential of at least twenty years.

Food pairing Suggestion: Soft cheese, duck pate’, cashews and dried fruits.
